After some discussion with my husband and a bit of research, I am diving into the world of gluten-free food. Ummmm…. what does that mean exactly? I have no idea yet. But hey… I guess I’m going to find out. I have a close friend who has promised to help me out, even to go shopping with me if necessary. She has an even more limited diet, as she can’t have gluten, lactose, has IBS, and has a child with an egg allergy! Makes my gluten free adventure seem a lot less frightening!
So for those of you out there who are living gluten-free or have loved ones who deal with this.. feel free to give suggestions, encouragement, or just your two cents! All is welcome and would be appreciated.
I couldn’t help but wonder… why is everybody and their dog gluten sensitive all of a sudden?!? Matt has a theory. Genetically modified seeds. Huh. Makes sense. I need to start a commune and get a bunch of friends to live off the land with me. Maybe not.
I am in the third week of a Bible Study with a couple of other ladies. Made to Crave by Lysa Turkeurst. I started it just to work on the weight thing but wow… it suddenly just went deeper. I don’t want to give up my bread and pasta and all the other things that are on the gluten-ous list! No way!
But hey… guess what is NOT on that list! CHOCOLATE!!!!!

Aah, welcome to gluten free dinning. it can be done! I made the break last summer and it has helped me tremendously with IBS and fibromyalgia symptoms. Its not always easy but it can be done. plus there are more and more alternatives out there now. shop the local food co-op if you have one. they are usually your best bet for good baking flour mixes.

So glad you brought this topic up. I had to lay off the gluten because of health issues. Not only is gluten-free better for your health, it helps you lose weight. It’s amazing how challenging it is to find foods without that stuff in it! Gluten is literally everywhere. I found a great pancake/baking mix that is actually pretty good. It’s called Pamela’s Products Baking & Pancake Mix. It pretty much does everything your generic pancake mix does only I think it tastes better. As for substitutions- tortillas, or anything with a corn or rice base- just be wary of breads made out of rice flour. Yuck!
